I like Naruto's opening theme song.

    Call me when I'm needed
    I will help
    Call me when your sick
    I'll be there
    Call me when your dying
I'll lay your final words to rest
But call me when you lie and decieve
    And I'll hate you forever.............

There are lots of good music so it's hard to point just one.
As some people said before Yoko Kanno makes great scores (Escaflowne, Cowboy Bebop), Joe Hisaishi also (Kaze no tani no Naushika, Mononoke hime, Tenkuu no shiro Rapyuta).
But at the moment I'm mostly listening to music from Leiji Matsumoto animes (Captain Harlock, Yamato, Galaxy Express) and it's apsolutly awsome. These are true oldies but goldies.

Bubble Gum Crisis(original and 2040) for some good driving/travelling music.
Its not 'pure' anime, but the opening song to Obun-Star Racers is pretty good.
Forgot to add: Starship Girl Yohko. I swear the one song for the first three episodes are based on a US song from the late 80's.

i love cowboy bebops jazzy tunes, also the acoustic guitar of trigun is cool.
love that scene in evangelion where asuka and shinji have learnt to fight in sync and that operatic song plays. ^_^

Yoko Kanno is a goddess among composers for all of her work, in particular Cowboy Bebop and Escaflowne. I absolutely love the title theme for Jungle wa Itsumo Hale Nochi Guu as well (so wonderfully bizarre). I must also admit to my love for the Revolutionary Girl Utena soundtrack, from which stems my love for J.A. Seazer, as I'm probably one of seven people on this planet who both know of his work and like it.

Initial D: Japanese version. American version's soundtrack sucks.

I personally really like the music in Hellsing. The opening music from GitS: 2nd Gig (Rise) is good as well.

I seem to remember Rahxephon, Cowboy Bebop and His and Her Circumstances having decent soundtracks.

I'm such a loser, but I like the music for Yuugiou. The BGM can be good at times (note: I speak of the japanese version here) and the openings and endings are actually quite good, especially Warriors and Overlap.

Digimon also has some great opeing themes. Target, The Biggest Dreamer, and FIRE = AWSM. 8D

For BGM, I'd have to go with Tsubasa Chronicles, Cowboy Bebop, Wolf's Rain, Noir, and the .Hacks. Yuki Kajiura and Yoko Kanno, anyone? 8D

And of course the Ghibli music. <3 Luff.

This probably varies, but I like the music for Tsubasa Chronicle... Especially their first 3 OSTs. x) FMA has pretty interesting openings / endings as well.

    Akira (Keneda.)
Grave of the Fireflys (Futari - Credits.) (Though, I'm irked that the music was extracted from the movie directly. Character dialog, ambience noise, etc.)
    Cowboy Bebop (Tank!)
Gundam Seed (Anna Ni Isshodattanoni and Fields of Hope.)

    Johnny Bazookatone (OST) - Done
    Bust-a-Move (DOS) - Done
Puzzle Bobble Variety (OST) - Done
Zuntata Rare Selection Vol. 5 Hot Menu (OST) - Current
    Bust-a-Move (SNES) - Next

Everything by Yoko Kanno: Escaflowne, Arjuna, Cowboy Bebop, Wolf's Rain (I love Gravity ) Also the music from Tsubasa Chronicles is quite good. And the one from Magic Knight Rayearth, but only the background music. Mayeb some of Gundam Seed, Full Metal Alchemist, certain themes from Evangelion, Tsukihime, Hack sign, among others.

I honestly can't think right now but Gundam Wing always had great music.
